Eclairs Café

Ingredients 1

  • 480mL milk
  • 4 egg yolks
  • 70g sugar
  • 40g maizena
  • 15g unsalted butter
  • Vanilla aroma (2 tablespoon)

Ingredients 2

  • 60g milk
  • 65g water
  • 75g flour
  • 20g cast sugar
  • 2 eggs
  • 50g butter
  • 1 pinch of salt
  • 1 extra egg to golden the pastries

Recipe 1

  1. Pour milk and vanilla in a pan, heat
  2. Whisk egg yolgs and sugar together until whitened
  3. Add Maizena to eggs and sugar, whisk until homegeneous
  4. When the milk is hot, pour 1/3 into the egg mix and whisk
  5. Pour the egg mix into the pan
  6. Heat medium, do not stop whisking
  7. Add butter and whisk
  8. Add dried coffee

2: Choux pastry

  1. Mix in a pan, milk, water, butter, sugar, and salt. Melt on low heat
  2. When melted, bring to a boil
  3. Remove from heat and add all flour at once. Use a spatula (marise) to mix
  4. Back on the heat to dry the paste. The paste should not stick to the pan.
  5. Remove from heat, add both eggs one by one, mixing in each egg very well with the spatula.
