- 60g milk
- 65g water
- 75g flour
- 20g cast sugar
- 2 eggs
- 50g butter
- 1 pinch of salt
- 1 extra egg to golden the pastries
Recipe 1
- Pour milk and vanilla in a pan, heat
- Whisk egg yolgs and sugar together until whitened
- Add Maizena to eggs and sugar, whisk until homegeneous
- When the milk is hot, pour 1/3 into the egg mix and whisk
- Pour the egg mix into the pan
- Heat medium, do not stop whisking
- Add butter and whisk
- Add dried coffee
2: Choux pastry
- Mix in a pan, milk, water, butter, sugar, and salt. Melt on low heat
- When melted, bring to a boil
- Remove from heat and add all flour at once. Use a spatula (marise) to mix
- Back on the heat to dry the paste. The paste should not stick to the pan.
- Remove from heat, add both eggs one by one, mixing in each egg very well with the spatula.
