200g flour

90g icing sugar

25g almond flour

100g butter

1 egg

1 pinch of salt
Recipe
- Slice the butter into smaller pieces. Leave it outside to soften.
- Prepare the egg by mixing the yolk and the white with a fork.
- Mix the flour, the icing sugar, the almond flour and the pinch of salt into a bowl. You can use a sieve. Whisking also helps in removing clumps.
- Use your hands to mix the butter with the flour mix to make it homogeneous. The butter must not make clumps and be well merged into the flour.
- Use a spatula to add the egg and mix it into your preparation until it forms a smooth ball
- Surround the ball a pinch of flour and wrap it with cling film. Keep in the fridge for at least an hour.
