Sweet shortcrust pastry dough

The sweet crust for dessert tarts

Ingredients

  • 200g flour
  • 90g icing sugar
  • 25g almond flour
  • 100g butter
  • 1 egg
  • 1 pinch of salt

Recipe

  1. Slice the butter into smaller pieces. Leave it outside to soften.
  2. Prepare the egg by mixing the yolk and the white with a fork.
  3. Mix the flour, the icing sugar, the almond flour and the pinch of salt into a bowl. You can use a sieve. Whisking also helps in removing clumps.
  4. Use your hands to mix the butter with the flour mix to make it homogeneous. The butter must not make clumps and be well merged into the flour.
  5. Use a spatula to add the egg and mix it into your preparation until it forms a smooth ball
  6. Surround the ball a pinch of flour and wrap it with cling film. Keep in the fridge for at least an hour.
